Snow Day

I love waking up to the snow outside my window.. everything looks so bright. The best.

We kept warm inside playing video games, knitting and drinking tea. 

I cant tell you how amazing it is to have a wood stove. I love sitting and just watching the fire burn from big logs down to red hot embers... plus it keeps the house so warm even when its -10 out like it was yesterday! way too cold for around here I'm not used to it. Matts mom even got us a 1/2 quart of wood yesterday so we will be warm for weeks to come. and my wonderful boy went out in the -10 to cut and stack all the wood <3

And Today the sun has come out and started to melt the ice off the leaves on the trees. But its still cold. these are my favorite snow days, when the sun is shining and its cold and we can go for a long walk and admire it all. So beautiful! And every few minutes snow will fall from the trees and the sun will sparkle off the flakes and its magical.

We had our first snow the other day! Pretty early for around here!  I love snow more than anything, we dont get enough of it here if you ask me. I love seeing everything covered in blankets of white sparkling fresh snow, it feels like your looking at a brand new world every year. I'm like a little kid staring out the passenger seat of the window constantly in awe of how beautiful everything looks. We went for a walk in the snow this morning I didn't even mind that I don't have proper snow boots and my feet got soaking wet and frozen, I just watched as the flakes flew from the sky and tried to catch a few on my tongue.
So here's some snow love for everyone who is wishing for snow like I was :)

cucunut curry lentil soup

This soup is so tasty and easy to make! I love soup on cold days, the best way to warm up :) I plan on making a lot of soup this winter. So let me know if you have any awesome soup recipes!

What you need

• two cans lentils (drained)
• I can coconut milk
• I carton veggie stock (I used this brand Kitchen Basics because its awesome and completely organic no preservatives and no added salt!)
• I large onion
• two stalks celery 
• two large carrots
• one clove garlic
• curry powder
• salt and pepper
• EVOO

 
Dice carrots, celery, garlic and onion and saute in pot with about a tablespoon evoo and salt and pepper until onions are soft.
Then add veggie stock, coconut milk and curry powder (I just added the curry powder until it was as curryish as I felt I wanted it)
Bring it all to a boil and then turn the heat down to low and let simmer for a few hours.
Add the lentils at the end before your read to take it off the heat. The canned lentils are already soft so they just need to be heated.

And that's it! Super healthy soup that tastes awesome.  you could add any other veggies you wanted too and I'm sure it would be good. I had a soup like this at a restaurant about two years ago and always said Id try and re-create it so I'm glad I finally did AND it came out great ! The version I had at the restaurant had kale in it too so I think I'll try that next time.

Back again

once again its been a while! finally got internet and my wireless hooked up yesss life is better!

lots going on.. biggest thing is I'm currently unemployed! Long story but hated the new management and really happy to not be there anymore! Miss my friend though :(
But I'm defiantly enjoying being a housewife for now haha! Matt says I can stay home as long as I want but I am starting to go a little crazy without a job and its only been a week !

And its almost Halloween! We are carving pumpkins tomorrow with Cam and Shannon and we are going to a haunted house on Sunday and probably watch some scary movies. I love halloween.

Baby time

This is pretty much my life as of lately lots of time with my very best friends and there amazing babies Aiden and Mason. I work and then spend most of my nights over at Cam and Shannons since Matt works nights and I get lonely at home. They get so excited to see me and I love feeding them and putting them to bed every night. They're seven months old now and have such amazing little personalities! Love them so much <3

oh and I cut all my hair off today :D almost had a panic attack but I love it now!

So things I'm currently excited for.
Tubing down the river and PNE this weekend, big family party and Tiffanys birthday next weekend, Coheed and Cambria in October, fright nights in October BUT most excited for Cam and Shannon coming back from their honeymoon on Tuesday!!!! yayy!!

summer love

Some things I've loved about summer in our new house

I had to leave my beautiful garden behind at our old house. but I spent the first few weeks after we moved doing lots of planting and planter making. I love gardening so much! I cant wait until next year to get our yard really beautiful and Matt is going to build me a nice big veggie garden! my basil and parsey are so big now in those planters too!

good things

Life seems to be finally calming down just a little. Things seem to be falling into place as summer comes to an end. I am really looking forward to fall, not just because of cosy sweaters and changing leaves and scarves and boots and everything I always love about fall but also just to see what the rest of the year brings for me. This year has been so huge for me so hopefully there are only more excited things to come.

One thing I'm extremely excited for in fall is that I'm going to see one of my favorite bands ever !! coheed and cambria I've waited so long to see them live! I got my ticket today I'm unbelieably stoked for this show its going to be amazing. 
A little sooner, well next weekend.. we are gonig to a local show with some bands I also really love so I'm totally looking forward to that too!

Also we just hired a guy at my work! first guy to ever work there haha! its so awesome to have a guy around there and hes really awesome too so even better. Theres been so many changes at my work lately its nice to have a few good ones for a change.

Tonight I went and ate a lot of sushi with my dad and brother and now I'm just waiting for a friend to bring my passion tea lemonade ! and it sounds like shes here now so bye for now!

trying to keep up

helloo! been a while but im still kickin!
Life has been pretty chaotic as of lately. Where do I even start... Well for one we are all moved into our new house! its so amazing and we've already starting transforming the yard little by little. I wish I could share some pictures but sadly somewhere in the move I've lost my camera cord :( It may just be lost among the mounds of stuff still in the spare room at my dads house but I haven't even gotten over there much since we moved. So pictures will come at some point down the road. But I am really so happy here. Our house is so perfect. the yard is amazing and Koda is so incredibly in heaven chasing sticks and stiffing around all day.
We don't have internet yet and we aren't getting cable so its a little lonely here at night ( matt works two jobs and is gone til 10 most nights other than weekends.) so at the moment I'm borrowing an internet signal from a lovely neighbor :) 

On another less happy note.. Work is insane, not in a good way. people have been getting fired and quitting like crazy! Everything feels so unstable and tense. We have a horrible new manager, and two people I really love got fired today for no good reason. It really sucks because I love this job, the people.. but things have changed hugely and I defiantly don't enjoy going to work like I have for the past 9 months.. But things happen, we will just have to wait and see how things go in the next few weeks.

Well I'm gonan go play some zelda and wait for matt to get home!
